The final moments of a coffee roast are among the most critical in determining the quality of the finished cup. Even after the heat source is switched off, coffee beans retain a significant amount of thermal energy. This residual heat continues to drive chemical reactions within the bean, a phenomenon known as carry-over roasting. If not controlled, it can push the coffee beyond its intended roast profile, reducing acidity, muting delicate aromatics, and altering the flavour characteristics the roaster worked so carefully to achieve.


Most conventional drum roasters rely solely on transferring the beans into a cooling tray, where ambient air gradually removes heat. While this cooling process is some what effective, it cannot prevent the continued roasting that occurs during bean discharge and in the first minute or two of cooling. Those moments may seem insignificant, but they can have a measurable impact on the final cup.


Rethinking How a Roast Ends:

Because the coffee remains well above the boiling point of water throughout this process, any microscopic droplets that may momentarily come in contact with the bean surface, evaporates  instantly. The coffee then exits the roasting chamber dry, preserving its integrity while avoiding the drawbacks associated with conventional water-dousing systems.

As mentioned, once the roasting process has been arrested, the beans are discharged into the cooling tray, where vigorous agitation and high-volume airflow rapidly reduce their temperature to ambient conditions.
